超微粉碎技术是当今国内外食品加工的关键技术,粉碎速度快、原料利用率高、污染小、粉体粒径小且均匀.文章结合国内外最新研究成果,对超微粉碎技术及近年来该技术在提高多酚、黄酮和可溶性膳食纤维等生物活性物质溶出率,开发新型功能食品和风味食品,提高废弃生物资源利用率等方面的应用进行了综述,并对超微粉碎技术及其在食品加工中的应用前景进行了展望.
Abstract:Superfine grinding technology is the key technology of the modern food processing at home and abroad which has the characteristics of fast grinding speed,high material consumption rate,less pollution,small and homogeneous powder diameter,etc.Based on the latest research results at home and abroad.Superfine grinding technology could be improved dissolution rate of bioactive substances such as polyphenols,flavonoids and soluble dietary fiber,be developed new functional food and flavor food,and be increased the biological waste resource utilization of application were reviewed.Finally,the superfine grinding technology and its application prospect in food processing were discussed.
